FREEZEDRYING 101
Wet output off the wash is perishable. Freeze drying removes the water by sublimation — ice to vapor, no liquid phase — in 24 to 48 hours, and it is the standard for any operation that sells what it washes. Here is how it works and how to size for it.
Why the drying step decides the grade
The wash can be perfect and the batch still lost in the dry. Water left in the collection invites mold within days, and slow evaporative drying gives oxidation a week to work on the aromatics you washed cold to protect. Drying is not a finishing detail — it is the stage where shelf life and grade are set.
Sublimation vs. evaporation
Air drying evaporates liquid water off the surface for 5–7 days in controlled humidity. As the water travels outward it carries dissolved compounds with it, the structure collapses as it leaves, and oxygen has days of access.
A freeze dryer takes a different path: the material is frozen solid, then the chamber pulls a vacuum and gently warms the shelves. Under vacuum, ice converts directly to vapor — sublimation — so the water leaves without ever being liquid. The structure stays open and intact instead of collapsing, the cycle finishes in 24–48 hours instead of a week, and oxygen exposure is measured in hours, not days.
Running a cycle
Spread the wet collection thin on parchment-lined trays — thin layers dry evenly and finish together. Run the full cycle; pulling early leaves a wet core that molds from the inside. The output is done when it is fully desiccated: dry to the touch with no cold spots, and stable at room temperature. Store sealed, cool, and dark.
Sizing the dryer to the wash
Match tray capacity to your wet output per wash day, not to the size of your ambitions. A benchtop unit handles R&D and boutique volumes; commercial wash lines need shelf area measured per shift, with the cycle time deciding how many batches a week one dryer can clear. Two smaller units beat one large one for redundancy — a compressor failure mid-cycle is a batch lost.
